Recipe: Paleo Steak Fajitas

Ingredients:

  • 1 lb uncooked flank steak (whole steak or pre-cut fajita strips)
  • 1 medium yellow onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 limes, juiced
  • 1/4 cup olive oil or coconut oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp to 1 tsp red pepper flakes (adjust to taste)

Makes about 6 fajitas

Fajita Instructions

  1. In a small mixing bowl, whisk together all marinade ingredients
  2. Season uncooked flank steak (or strips if pre-cut) with salt and pepper
  3. Place seasoned flank steak in a Ziplock-type bag and pour over marinade. Seal and refrigerate for 1-3 hours to tenderize and flavor the steak.

  5. Slice onion and peppers into strips lengthwise, and set aside
  6. When steak is marinaded, grill over medium heat until desired doneness is reached. Tent whole steak (or strips) with aluminum foil and set aside
  7. Add a tablespoon or two of oil to a large frying pan set to medium heat
  8. Season peppers and onions with salt and pepper
  9. Sauté veggies together about 3-5 minutes – just until slightly tender
  10. If you cooked a whole flank steak, slice into fajita-sized strips
  11. Serve with warmed tortillas
  12. Garnish however you like – guacamole, salsa, or just a squeeze of lime
