Recipe: Guacamole with Pomegranate
Ingredients
- 4 avocados, mashed
- Seeds from 1 pomegranate
- 2 jalapenos, diced small
- 1/4 cup red onion, diced small
- 1 or 2 cloves of garlic, minced
- 1 to 1-1/2 limes, juiced
- Salt and pepper to taste
- 1/4 cup cilantro (leaves only) chopped
Instructions
- Halve and pit avocados, scoop out flesh, then mash together in mixing bowl – leaving slightly chunky
- Stir in remaining ingredients, folding in pomegranate seeds last
- Serve as dip for your favorite veggies or gluten-free chips
- Seal and refrigerate any leftovers – the lime juice should help keep the guacamole green and fresh for another day or two
